Creamy Sun-Dried Tomato Gnocchi

1 lb (450g) potato gnocchi

1 cup sun-dried tomatoes, packed in oil, drained and roughly chopped

1 cup heavy cream

1 tablespoon olive oil

3 cloves garlic, minced

1 cup fresh spinach, roughly chopped

1/2 cup grated Parmesan cheese

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional, for heat)

Salt and pepper, to taste

Fresh basil leaves, for garnish

Extra Parmesan cheese, for serving

Cook the Gnocchi: Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions. Once they float to the top (usually in about 2-3 minutes), drain and set aside.

    Sauté the Aromatics: In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for about 1 minute until fragrant. Be careful not to burn the garlic.

      Add Sun-Dried Tomatoes: Stir in the chopped sun-dried tomatoes and cook for another 2-3 minutes, allowing them to soften slightly and release their flavors.

        Incorporate Cream: Lower the heat and pour in the heavy cream. Stir well to combine and let it simmer for about 3-4 minutes, allowing the sauce to thicken slightly.

          Mix in Spinach and Cheese: Add the chopped spinach, grated Parmesan cheese, dried basil, and red pepper flakes (if using). Stir until the spinach wilts and the cheese melts into the sauce.

            Combine Gnocchi and Sauce: Gently fold the cooked gnocchi into the creamy sauce, making sure they are well-coated. Let it cook together for another 2-3 minutes so the gnocchi can absorb some of the flavors.
