Ingredients

12 oz fettuccine pasta

1 cup heavy cream

1 cup grated Parmesan cheese

1/2 cup sun-dried tomatoes (packed in oil, chopped)

2 tablespoons olive oil (from the sun-dried tomatoes jar)

3 cloves garlic (minced)

1/2 teaspoon red pepper flakes (adjust to taste)

1/4 teaspoon black pepper

1/2 teaspoon salt (or to taste)

Fresh basil leaves (for garnish, optional)

Extra Parmesan cheese (for serving, optional)

Instructions

Cook the Pasta: In a large pot of boiling salted water, cook the fettuccine according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the pasta.

Prepare the Sauce: In a large skillet over medium heat, add the olive oil. Once heated, add the minced garlic and sauté for about 1-2 minutes until fragrant, but not browned.

Add Cream and Cheese: Reduce the heat to low, then pour in the heavy cream, stirring constantly. Gradually add the grated Parmesan cheese, continuing to stir until the cheese melts and the sauce is creamy.

Incorporate Sun-Dried Tomatoes: Add the chopped sun-dried tomatoes and mix well. Then sprinkle in the red pepper flakes, black pepper, and salt. Stir to combine all the flavors. If the sauce seems too thick, gradually add the reserved pasta water until you reach the desired consistency.

Combine Pasta and Sauce: Add the drained fettuccine to the skillet with the Alfredo sauce. Toss the pasta gently in the sauce until fully coated.

Serve: Divide the creamy sun-dried tomato Alfredo among serving plates. Garnish with fresh basil leaves and an extra sprinkle of Parmesan cheese if desired. Serve immediately and enjoy!
