To achieve the perfect creamy sauce for your Spinach Artichoke Pasta, temperature control and ingredient selection are crucial. Start by heating your chosen fat—olive oil or butter—in a large saucepan over medium heat. Once the fat is shimmering, add your minced garlic. Sauté the garlic just until fragrant, about 30 seconds to 1 minute, ensuring it does not brown. Browning garlic can impart a bitter taste, which we want to avoid in this creamy dish.

Ingredients

12 oz pasta (fettuccine or penne works well)

1 cup frozen spinach, thawed and drained

1 can (14 oz) artichoke hearts, drained and roughly chopped

1 cup heavy cream

1 cup cream cheese, softened

1 cup grated Parmesan cheese

2 cloves garlic, minced

1 small onion, finely chopped

2 tablespoons olive oil

1/2 teaspoon red pepper flakes (optional for heat)

Salt and pepper to taste

Fresh parsley or basil for garnish

Extra Parmesan for serving (optional)

Instructions

Cook the Pasta: In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Drain and set aside, reserving 1 cup of pasta water.

Sauté Vegetables: In a large skillet over medium heat, add olive oil. Once hot, add the chopped onion and sauté until softened, about 3-4 minutes. Add the minced garlic and red pepper flakes (if using) and cook for an additional 1-2 minutes until fragrant.

Prepare Creamy Sauce: Lower the heat to medium-low. Stir in the cream cheese and allow it to melt before adding the heavy cream. Mix well until smooth, then slowly add the grated Parmesan cheese, stirring continuously until melted and creamy.

Add Spinach and Artichokes: Fold in the drained spinach and chopped artichoke hearts. If the sauce appears too thick, add some reserved pasta water, adjusting to your desired consistency. Season with salt and pepper to taste.

Combine Pasta and Sauce: Add the cooked pasta directly into the skillet and toss to combine, ensuring all the pasta is well coated with the creamy sauce.

Serve: Remove from heat and garnish with fresh parsley or basil and additional Parmesan cheese if desired. Serve immediately with a side of garlic bread for a complete meal!
