Creamy Spinach and Ricotta Shell Bake

12 large pasta shells

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup cottage cheese

1 cup mozzarella cheese, shredded (divided)

1/2 cup Parmesan cheese, grated

1 large egg

2 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper to taste

2 cups marinara sauce

Fresh basil leaves, for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Shells: In a large pot of boiling salted water, cook the pasta shells according to package instructions until al dente. Drain and set aside to cool.

      Prepare the Filling: In a large bowl, combine the chopped spinach, ricotta cheese, cottage cheese, 3/4 cup of mozzarella, Parmesan cheese, egg, minced garlic, Italian seasoning, salt, and pepper. Mix until well combined.

        Stuff the Shells: Carefully fill each cooled pasta shell with the spinach and cheese mixture using a spoon or a piping bag for easier stuffing.

          Layer with Sauce: Spread half of the marinara sauce evenly on the bottom of a 9x13 inch baking dish. Arrange the stuffed shells on top of the sauce in a single layer. Pour the remaining marinara sauce over the shells, making sure to cover them completely.

            Top with Cheese: Sprinkle the remaining mozzarella cheese over the top of the stuffed shells.

              Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbling and lightly golden.

                Garnish and Serve: Remove from the oven, let it cool for a few minutes, then garnish with fresh basil leaves before serving.
