Creamy Spinach and Eggs

2 cups fresh spinach, washed and roughly chopped

4 large eggs

1/2 cup heavy cream

2 tablespoons cream cheese, softened

1/4 cup grated Parmesan cheese

2 tablespoons olive oil

2 cloves garlic, minced

Salt and pepper, to taste

A pinch of nutmeg (optional)

Freshly chopped parsley or chives for garnish

Prep the Spinach: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant but not browned.

    Cook the Spinach: Add the chopped spinach to the skillet. Stir and cook for about 2-3 minutes, until wilted. Season with a pinch of salt and pepper. Remove the spinach and garlic mixture from the skillet and set aside.

      Make the Creamy Sauce: In the same skillet, reduce the heat to low and add the heavy cream and cream cheese. Stir until the cream cheese has melted and the mixture is smooth. Stir in the grated Parmesan cheese, and if desired, a pinch of nutmeg. Season with additional salt and pepper to taste. Keep the sauce warm on low heat.

        Cook the Eggs: In a separate pan, heat the remaining 1 tablespoon of olive oil over medium heat. Crack the eggs directly into the pan, cooking them to your desired doneness—sunny-side up or over-easy, for example.

          Combine: Once the eggs are cooked, add the sautéed spinach back into the skillet with the creamy sauce. Mix to combine, then place the eggs on top of the creamy spinach mixture.

            Serve & Garnish: Plate the creamy spinach and eggs on individual serving dishes. Garnish with chopped parsley or chives for a fresh finish.
