Ingredients

2 lbs ripe tomatoes, halved

1 medium onion, diced

4 cloves garlic, peeled

3 tablespoons olive oil

Salt and pepper to taste

1 teaspoon dried basil

1 teaspoon dried oregano

1 tablespoon balsamic vinegar

2 cups vegetable broth

1 cup heavy cream (or coconut cream for a vegan option)

Fresh basil leaves for garnish

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Roast the Tomatoes: Arrange the halved tomatoes, diced onion, and garlic cloves on a large baking sheet. Drizzle with olive oil, then season generously with salt, pepper, basil, and oregano. Toss everything together to coat evenly.

Bake: Roast in the preheated oven for about 30-35 minutes, or until the tomatoes are tender and lightly caramelized. Stir halfway through for even roasting.

Blend the Soup: Remove the baking sheet from the oven and let it cool slightly. Transfer the roasted mixture to a blender (or use an immersion blender) and add the balsamic vinegar and vegetable broth. Blend until smooth.

Create Creaminess: In a large pot over medium heat, pour in the blended tomato mixture. Stir in the heavy cream and bring to a gentle simmer, allowing it to heat through. Taste and adjust seasonings if needed.

Serve: Ladle the creamy soup into bowls and garnish with fresh basil leaves. Enjoy with crusty bread or a grilled cheese sandwich for a perfect pairing!
