12 oz spaghetti

2 red bell peppers, roasted and peeled

1 cup heavy cream

1 cup grated Parmesan cheese

1 cup ricotta cheese

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

Fresh basil leaves for garnish

1/2 cup shredded mozzarella cheese

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Cook Spaghetti: In a large pot, bring salted water to a boil. Add the spaghetti and cook until al dente, according to package instructions. Drain and set aside.

      Prepare Roasted Peppers: If you haven’t done so yet, roast the red bell peppers by placing them on a baking sheet under the broiler until the skins are charred and blistered, about 10-15 minutes. Remove from the oven, cover with a towel to steam for about 10 minutes, then peel off the skins, remove seeds, and chop finely.

        Make Creamy Sauce: In a blender, combine roasted red peppers, heavy cream, garlic, Italian seasoning, red pepper flakes, and a pinch of salt and pepper. Blend until smooth and creamy.

          Mix Ingredients: In a large mixing bowl, combine the cooked spaghetti with the creamy sauce, Parmesan cheese, ricotta cheese, and adjust seasoning if needed. Mix well until all pasta is coated evenly.

            Transfer to Baking Dish: Transfer the spaghetti mixture into a greased 9x13-inch baking dish. Sprinkle shredded mozzarella cheese evenly over the top.

              Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, until the cheese is bubbly and slightly golden.
