Creamy Roasted Red Pepper Dip

2 large red bell peppers

1 cup cream cheese, softened

1/2 cup sour cream

1/2 cup mayonnaise

1 garlic clove, minced

1 teaspoon smoked paprika

1 teaspoon lemon juice

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Tortilla chips or veggies (for serving)

Instructions
 

Roast the Peppers: Preheat your oven to 475°F (245°C). Cut the red bell peppers in half, remove the seeds and membranes, and place them cut-side down on a baking sheet lined with parchment paper. Roast in the oven for about 20-25 minutes or until the skins are blistered and blackened. Remove from the oven and cover with foil for 10 minutes to steam. This will make peeling easier.

    Peel the Peppers: Once the peppers are cool enough to handle, carefully peel off the charred skin and discard it. Roughly chop the roasted peppers and set aside.

      Blend the Dip: In a food processor, combine the roasted red peppers, softened cream cheese, sour cream, mayonnaise, minced garlic, smoked paprika, lemon juice, salt, and pepper. Blend until smooth and creamy, scraping down the sides as needed.

        Taste and Adjust: Taste the dip and adjust seasoning if necessary. If you like a little more tang, add an extra squeeze of lemon juice or a pinch more salt.

          Chill and Serve: Transfer the dip to a serving bowl, cover, and refrigerate for at least 30 minutes to let the flavors meld. Before serving, garnish with fresh chopped parsley. Serve with tortilla chips or an array of fresh vegetable sticks for dipping.
