2 large red bell peppers

1 cup cream cheese, softened

1/2 cup sour cream

1/4 cup mayonnaise

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon smoked paprika

1 tablespoon fresh lemon juice

Salt and pepper to taste

Fresh parsley, for garnish (optional)

Roast the Peppers: Preheat your oven to 450°F (230°C). Cut the red bell peppers in half and remove the seeds. Place them cut-side down on a baking sheet lined with foil. Roast in the oven for about 25-30 minutes, or until the skins are charred and blistered.

    Peel the Peppers: Once roasted, remove the peppers from the oven, cover them with the foil or a clean kitchen towel, and let them steam for about 10 minutes. This helps loosen the skins. After steaming, peel off the charred skins and chop the peppers into smaller pieces.

      Blend the Ingredients: In a food processor, combine the roasted red peppers, cream cheese, sour cream, mayonnaise, minced garlic, onion powder, smoked paprika, lemon juice, salt, and pepper. Blend until smooth and creamy, scraping down the sides as needed.

        Adjust Seasoning: Taste the dip and adjust seasoning if needed. You can add more lemon juice for tang or more smoked paprika for a deeper flavor.

          Serve and Garnish: Transfer the dip into a serving bowl and, if desired, sprinkle chopped fresh parsley on top for a pop of color.
