1 pound gnocchi (store-bought or homemade)

2 large red bell peppers

1 tablespoon olive oil

1 small yellow onion, diced

2 cloves garlic, minced

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 teaspoon dried basil

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh basil leaves, for garnish

Extra Parmesan cheese, for serving

Roast the Peppers: Preheat your oven to 475°F (245°C). Place the whole red bell peppers on a baking sheet and roast them in the oven for about 30 minutes, turning occasionally until all sides are charred and blistered. Remove from the oven, place them in a bowl, and cover with plastic wrap for about 10 minutes to steam. Once cooled slightly, peel the skin off, remove seeds, and chop the flesh into small pieces.

    Cook the Gnocchi: While the peppers are roasting, bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions, usually about 2-4 minutes or until they float to the surface. Drain and set aside.

      Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent. Then, add the minced garlic and cook for an additional minute until fragrant.

        Make the Creamy Sauce: Add the roasted bell pepper pieces to the skillet and stir well. Pour in the heavy cream and bring the mixture to a gentle simmer.
