1 large head of cauliflower, chopped into florets

1 bulb of garlic (about 10-12 cloves), unpeeled

2 tablespoons olive oil

Salt and pepper, to taste

1 medium onion, diced

3 cups vegetable broth

1 cup heavy cream (or coconut cream for a dairy-free option)

2 cups sharp cheddar cheese, grated

1 teaspoon dried thyme (or fresh thyme for garnish)

1 tablespoon lemon juice

Fresh chives or parsley, for garnish

Instructions
 

Roast the Garlic and Cauliflower: Preheat the oven to 425°F (220°C). On a large baking sheet, toss the cauliflower florets with olive oil, salt, and pepper. Place the unpeeled garlic bulb in the center of the baking sheet. Roast in the oven for 25-30 minutes or until the cauliflower is golden and tender, and the garlic becomes soft.

    Sauté the Onions: In a large pot, heat a tablespoon of olive oil over medium heat. Add the diced onion and cook until translucent, about 5-7 minutes.
