12 oz fettuccine pasta

1 cup pumpkin puree (canned or homemade)

1 cup heavy cream

1/2 cup grated Parmesan cheese

2 tablespoons unsalted butter

3 cloves garlic, minced

1/2 teaspoon nutmeg

1/2 teaspoon cinnamon

Salt and pepper, to taste

Fresh parsley, chopped for garnish

Toasted pine nuts (optional for garnish)

Cook the Pasta: In a large pot of boiling salted water, cook the fettuccine according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest and set the pasta aside.

    Prepare the Sauce: In a large skillet over medium heat, melt the unsalted butter. Once melted, add minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

      Combine Pumpkin & Cream: Reduce the heat to low, then stir in the pumpkin puree and heavy cream. Mix well until combined and creamy. Allow to warm gently for about 2-3 minutes.

        Add Cheese & Spices: Stir in the grated Parmesan cheese, nutmeg, and cinnamon. Continue to cook for another 2-3 minutes, stirring frequently until the cheese has melted and the sauce is smooth. Season with salt and pepper to taste.

          Mix Pasta with Sauce: Add the cooked fettuccine to the pumpkin Alfredo sauce in the skillet. Toss everything together until the pasta is well-coated with the creamy sauce. If the sauce is too thick, gradually add reserved pasta water until you reach your desired consistency.

            Serve & Garnish: Divide the creamy pumpkin pasta among serving plates. Garnish with freshly chopped parsley and, if desired, sprinkle some toasted pine nuts on top for added crunch.
