1 lb (450g) potato gnocchi (store-bought or homemade)

1 cup heavy cream

1 cup pesto (store-bought or homemade)

1 cup cherry tomatoes, halved

1 cup fresh spinach, roughly chopped

1 cup mozzarella cheese, shredded

1/2 cup Parmesan cheese, grated

1 teaspoon garlic powder

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

2 tablespoons olive oil

Fresh basil leaves for garnish

Preheat Oven: Preheat your oven to 400°F (200°C).

    Cook Gnocchi: In a large pot of salted boiling water, cook the gnocchi according to the package instructions until they float to the surface (typically 2-3 minutes). Drain and set aside.

      Prepare Creamy Sauce: In a mixing bowl, combine the heavy cream and pesto. Mix until fully incorporated. Season with garlic powder, red pepper flakes, salt, and pepper to taste.

        Combine Ingredients: In a large mixing bowl, gently fold together the cooked gnocchi, the creamy pesto mixture, halved cherry tomatoes, and chopped spinach. Ensure all the ingredients are well-coated.

          Assemble the Bake: In a greased 9x13 inch baking dish, pour half of the gnocchi mixture. Sprinkle half of the shredded mozzarella and half of the grated Parmesan on top. Pour the remaining gnocchi mixture over, and then top with the rest of the mozzarella and Parmesan cheeses.

            Bake: Drizzle olive oil over the top of the dish for added flavor and crispness. Bake in the preheated oven for 20-25 minutes, or until the cheeses are bubbly and golden brown.
