8 oz. pasta (penne or fettuccine work best)

2 boneless, skinless chicken breasts

Salt and pepper, to taste

2 tablespoons olive oil

1 cup heavy cream

1 cup fresh basil pesto (store-bought or homemade)

¼ cup grated Parmesan cheese

1 cup cherry tomatoes, halved

1 cup spinach leaves

2 cloves garlic, minced

Fresh basil leaves for garnish

Extra Parmesan for serving

Cook the Pasta: In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Reserve ½ cup of pasta water, then drain and set aside.

    Prepare the Chicken: While the pasta cooks, season the chicken breasts with salt and pepper. In a large skillet, heat the olive oil over medium-high heat. Add the chicken and cook for 6-7 minutes on each side, or until golden brown and cooked through. Remove from the skillet and let rest for a few minutes before slicing into strips.

      Make the Sauce: In the same skillet, lower the heat to medium and add the minced garlic. Sauté for about 30 seconds until fragrant. Then add the heavy cream and bring to a gentle simmer. Mix in the basil pesto and Parmesan cheese until well combined. If the sauce is too thick, add some reserved pasta water to reach your desired consistency.

        Combine Ingredients: Add the cooked pasta, spinach, and halved cherry tomatoes to the skillet. Toss everything together until the pasta is well coated with the creamy pesto sauce. If needed, season with additional salt and pepper.
