4 ripe peaches, peeled and diced

1 cup Greek yogurt (plain or vanilla)

½ cup coconut milk (or milk of choice)

¼ cup honey or maple syrup (adjust based on sweetness preference)

1 tablespoon lemon juice

1 teaspoon vanilla extract

A pinch of salt

Optional: Fresh peach slices or mint leaves for garnish

Instructions
 

Prepare the Peaches: Start by peeling the peaches and removing the pits. Dice them into small chunks and place half of the diced peaches in a blender. Set the other half aside for later.

    Blend the Mixture: In the blender, add the Greek yogurt, coconut milk, honey, lemon juice, vanilla extract, and a pinch of salt. Blend until smooth and creamy.

      Mix in Peach Chunks: Pour the blended mixture into a mixing bowl and gently fold in the reserved peach chunks for texture. If desired, you can reserve a few diced peaches for garnish.

        Pour into Molds: Carefully pour the peach yogurt mixture into your popsicle molds. Leave a little room at the top as the mixture will expand while freezing.

          Insert Sticks: If your molds have a built-in stick, insert it. If you're using traditional popsicle molds, place a wooden stick in the center of each.

            Freeze: Place the molds in the freezer for at least 4-6 hours, or until completely frozen. If you want to unmold them easily, let them sit at room temperature for a few minutes before pulling them out.

              Serve and Enjoy: Once frozen, remove the popsicles from the molds. You can garnish them with fresh peach slices or mint leaves if desired. Serve immediately and enjoy your refreshing treat!
