Creamy Peach Soup

4 medium ripe peaches, peeled and chopped

1 small yellow onion, finely chopped

2 cups vegetable broth

1 cup heavy cream

1 tablespoon olive oil

1 teaspoon fresh thyme leaves

1 tablespoon honey (or to taste)

Salt and black pepper to taste

Optional: Fresh basil leaves for garnish

Optional: A sprinkle of toasted almond slivers

Instructions
 

Sauté the Onion: In a large pot, heat the olive oil over medium heat. Add the chopped onion, and sauté until it becomes translucent and slightly golden, about 5-7 minutes.

    Cook Peaches: Add the chopped peaches to the pot, stirring well to combine. Cook for an additional 5 minutes until the peaches soften.

      Add Broth: Pour in the vegetable broth, bringing the mixture to a gentle simmer. Add the fresh thyme. Let it cook for about 10 minutes so the flavors meld together.

        Blend the Soup: Remove the pot from the heat. Using an immersion blender, purée the soup until it's velvety smooth. If you don't have an immersion blender, carefully transfer the mixture to a countertop blender in batches and blend until smooth.

          Finish with Cream: Return the blended soup to low heat, stir in the heavy cream, and add honey, salt, and pepper to taste. Allow the soup to heat through but do not let it boil.

            Serve: Ladle the creamy peach soup into bowls. If desired, garnish with fresh basil leaves and a sprinkle of toasted almond slivers for added crunch.

              Enjoy: This soup can be served warm or chilled. For an extravagant touch, serve with a swirl of additional heavy cream on top and a sprig of thyme.
