Creamy Mushroom Garlic Pasta

8 oz (225g) fettuccine or your pasta of choice

2 tablespoons olive oil

1 tablespoon butter

4 cloves garlic, minced

10 oz (280g) cremini or button mushrooms, sliced

1 teaspoon dried thyme (or 1 tablespoon fresh thyme leaves)

1 teaspoon dried oregano

½ teaspoon red pepper flakes (optional, for heat)

Salt and black pepper to taste

1 cup (240ml) heavy cream

½ cup (50g) grated Parmesan cheese

¼ cup (60ml) pasta cooking water

Fresh parsley, chopped for garnish

Extra grated Parmesan for serving

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Reserve ¼ cup of pasta cooking water, then drain the rest and set aside.

    Sauté Mushrooms and Garlic: In a large skillet over medium heat, add the olive oil and butter. Once the butter is melted and bubbling, add the minced garlic and sauté for about 30 seconds until fragrant.

      Add Mushrooms: Stir in the sliced mushrooms and sauté for about 5-7 minutes, or until they're tender and browned. Stir in the dried thyme, oregano, red pepper flakes (if using), and season with salt and pepper.

        Create the Creamy Sauce: Lower the heat to medium-low, and pour in the heavy cream. Allow the mixture to simmer gently for about 3-4 minutes until slightly thickened. Stir in the grated Parmesan cheese, mixing until smooth and creamy.

          Combine with Pasta: Add the cooked fettuccine to the skillet, tossing to coat the pasta in the creamy mushroom sauce. If the sauce is too thick, gradually add the reserved pasta cooking water until you achieve your desired consistency.

            Serve: Taste and adjust seasoning if needed. Garnish with fresh chopped parsley and more grated Parmesan before serving.
