Ingredients

1 cup elbow macaroni

1 tablespoon olive oil

1/2 cup sharp cheddar cheese, shredded

1/2 cup mozzarella cheese, shredded

1/2 cup cream cheese, softened

1/2 cup milk

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

1/4 cup breadcrumb, for topping

Fresh parsley, chopped (for garnish)

Instructions

Preheat Oven: Begin by preheating your oven to 350°F (175°C). Grease a muffin tin with cooking spray or line with paper liners for easy removal.

Cook Macaroni: In a large pot of boiling salted water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

Mix Cheese Sauce: In a mixing bowl, combine the cooked macaroni, olive oil, cheddar cheese, mozzarella cheese, cream cheese, milk, and eggs. Stir well until all the ingredients are evenly incorporated.

Season the Mixture: Add garlic powder, onion powder, smoked paprika, salt, and pepper to the macaroni mixture. Adjust the seasonings to your taste, mixing until everything is combined.

Fill Muffin Tin: Spoon the macaroni mixture into each muffin cup, filling them about 3/4 full. This will give them room to expand while baking.

Add Breadcrumbs: Sprinkle the top of each muffin with a little breadcrumb to create a crunchy topping.

Bake: Place the muffin tin in the preheated oven and bake for about 20-25 minutes, or until the tops are golden and the muffins are set.

Cool and Serve: Once baked, remove the muffins from the oven and allow them to cool in the tin for about 5 minutes. Carefully transfer them to a wire rack to cool slightly. Garnish with chopped parsley before serving.

Enjoy your delicious Creamy Mac and Cheese Muffins as a tasty snack or a delightful side dish!
