Creamy Lemon Herb Orzo

1 cup orzo pasta

3 cups vegetable broth

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

Zest of 1 lemon

Juice of 1 lemon

2 tablespoons fresh parsley, chopped

2 tablespoons fresh basil, chopped

Salt and pepper to taste

Optional: additional fresh herbs for garnish

Cook the Orzo: In a medium saucepan, bring the vegetable broth to a boil. Add the orzo and cook according to package instructions until al dente, about 8-10 minutes. Drain and set aside, reserving about 1/2 cup of the broth.

    Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional 1 minute, until fragrant.

      Create the Creamy Base: Lower the heat and add the heavy cream to the skillet. Stir gently to combine with the onions and garlic. Allow it to simmer for about 2-3 minutes.

        Add Cheese and Zest: Gradually stir in the grated Parmesan cheese, lemon zest, and lemon juice. Mix until the cheese is melted and the sauce is creamy. If the mixture is too thick, add a little reserved broth to reach the desired consistency.
