1 lb boneless, skinless chicken breasts, diced

1 tablespoon olive oil

1 medium onion, diced

2 celery stalks, diced

6 cups chicken broth

1 cup orzo pasta

Zest of 1 lemon

Juice of 1 lemon

1 teaspoon dried thyme

1 teaspoon dried oregano

1 cup heavy cream

Salt and pepper to taste

Sauté the Chicken: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced chicken and season with salt and pepper. Sauté until the chicken is browned on all sides, about 5-7 minutes. Remove the chicken from the pot and set aside.
