Creamy Greek Yogurt Popsicles

2 cups plain Greek yogurt (full-fat for creaminess)

1 ripe banana, mashed

1 cup fresh pineapple chunks

½ cup coconut milk (canned for richness)

2-3 tablespoons honey or maple syrup (to taste)

1 teaspoon pure vanilla extract

A pinch of sea salt

Optional toppings: shredded coconut, nuts, or fresh fruit for garnish

Instructions
 

Prepare the Base: In a large mixing bowl, combine the Greek yogurt, mashed banana, coconut milk, honey (or maple syrup), vanilla extract, and a pinch of sea salt. Mix well until smooth and creamy.

    Blend the Pineapple: In a blender, add the fresh pineapple chunks and blend until smooth. For a chunkier texture, pulse a few times to keep some pineapple pieces intact.

      Combine Mixtures: Gently fold the blended pineapple into the yogurt mixture, creating a lovely swirled effect for added flavor and visual appeal. Don’t overmix; a marbled look is perfect!

        Fill the Molds: Pour the yogurt-pineapple mixture into popsicle molds, leaving a little space at the top for expansion when freezing. If desired, add toppings like shredded coconut or small fruit pieces before inserting the sticks.

          Insert Sticks: Place the popsicle sticks into the molds. If using molds without sticks, cover with foil and insert wooden popsicle sticks through the foil.

            Freeze: Carefully place the molds in the freezer and allow them to freeze for at least 6 hours, or until completely solid.

              Unmold the Popsicles: To release the popsicles, run warm water over the outside of the molds for a few seconds. Carefully pull on the sticks to remove the popsicles.

                Serve & Enjoy: Serve the popsicles immediately, or store them in a freezer-safe bag or container for later enjoyment. Garnish with additional toppings if desired.
