2 cups fresh mushrooms (cremini or button), sliced

2 tablespoons olive oil

4 cloves garlic, minced

1 cup heavy cream

1 teaspoon dried thyme (or 1 tablespoon fresh thyme, chopped)

1 tablespoon soy sauce

Salt and pepper to taste

4 large flour tortillas

1 cup fresh spinach leaves

1/2 cup grated Parmesan cheese (optional)

Fresh parsley, chopped (for garnish)

Sauté the Mushrooms: In a large skillet, heat the olive oil over medium heat. Add the sliced mushrooms and sauté for 5-7 minutes, or until they are golden brown and tender.

    Add Garlic: Stir in the minced garlic and cook for an additional 1-2 minutes, until fragrant.

      Make the Cream Sauce: Lower the heat and pour in the heavy cream, stirring gently to combine. Add the dried thyme, soy sauce, salt, and pepper. Let it simmer for about 3-5 minutes or until the sauce thickens slightly.

        Combine: Remove the skillet from heat and stir in the grated Parmesan (if using) until melted and well incorporated.

          Prepare the Wraps: Lay out the flour tortillas on a clean surface. Place a handful of fresh spinach leaves on each tortilla, followed by a generous scoop of the creamy garlic mushroom mixture.
