Ingredients

1 medium head cauliflower, chopped into florets

4 cloves garlic, minced

1/2 cup unsweetened almond milk (or any milk of choice)

2 tablespoons unsalted butter (or vegan butter)

1/4 cup creamy plain Greek yogurt (or dairy-free yogurt)

1 teaspoon salt (adjust to taste)

1/2 teaspoon black pepper

1/4 teaspoon nutmeg (optional)

Fresh chives or parsley, chopped for garnish

Instructions

Prepare the Cauliflower: Bring a large pot of salted water to a boil. Add the cauliflower florets and cook for about 10-12 minutes until they are fork-tender. Drain well and set aside.

Sauté the Garlic: In a small skillet, melt the unsalted butter over medium heat. Add the minced garlic and sauté for 2-3 minutes until fragrant and golden, being careful not to burn it.

Mash the Cauliflower: In a mixing bowl or a large food processor, combine the cooked cauliflower, sautéed garlic, almond milk, Greek yogurt, salt, pepper, and nutmeg (if using). Blend until smooth and creamy. If you prefer a chunkier texture, mash with a potato masher instead.

Taste and Adjust: Give the mash a taste and adjust the seasoning with more salt and pepper as desired. If you like, you can add more almond milk to achieve your preferred consistency.

Serve and Garnish: Transfer the creamy garlic cauliflower mash to a serving bowl. Garnish with chopped chives or parsley for a fresh touch. Serve hot as a perfect side dish.
