Ingredients

1 cup orzo pasta

2 cups fresh spinach, chopped

1 cup crumbled feta cheese

1/2 cup heavy cream

1/2 cup vegetable broth

1 tablespoon olive oil

2 cloves garlic, minced

1/4 teaspoon red pepper flakes (optional)

Salt and pepper, to taste

Fresh basil or parsley, for garnish

Lemon wedges, for serving

Instructions

Cook the Orzo: Bring a large pot of salted water to a boil. Add the orzo pasta and cook according to package instructions until al dente. Drain and set aside.

Sauté the Spinach and Garlic: In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for about 30 seconds until fragrant. Then, add the chopped spinach and cook until wilted, about 2-3 minutes.

Make the Creamy Sauce: In the same skillet, lower the heat and pour in the vegetable broth and heavy cream. Stir well to combine, allowing the mixture to simmer gently for about 3-5 minutes.

Incorporate the Feta: Stir in the crumbled feta cheese and red pepper flakes (if using) into the sauce. Allow the cheese to melt slightly, giving the sauce a creamy texture. Season with salt and pepper to taste.

Combine: Add the cooked orzo to the skillet and mix thoroughly to coat the pasta with the creamy sauce. Let it cook together for another 2-3 minutes until heated through.

Plate and Serve: Serve the creamy feta spinach orzo bowls warm, garnished with fresh basil or parsley. Add a squeeze of lemon juice from the wedges on top for an extra burst of freshness.
