2 cups fresh corn kernels (about 3-4 ears) or 1 can (15 oz) of sweet corn, drained

1 ripe avocado, diced

1 small red onion, finely chopped

1 red bell pepper, diced

1 jalapeño, seeded and minced (optional for extra heat)

1/4 cup fresh cilantro, chopped

Juice of 2 limes

1/2 cup Greek yogurt or sour cream

1 tsp honey (adjust based on sweetness preference)

Salt and pepper to taste

1/2 tsp cumin

1/4 tsp smoked paprika (optional)

Prepare the Corn: If using fresh corn, bring a pot of salted water to a boil. Add the corn and cook for 3-5 minutes until tender. Drain and allow to cool. If using canned corn, simply drain and rinse under cold water.
