1 lb (450g) boneless, skinless chicken breasts, sliced into strips

1 tablespoon olive oil

1 medium onion, thinly sliced

1 red bell pepper, thinly sliced

1 yellow bell pepper, thinly sliced

2 cloves garlic, minced

1 teaspoon chili powder

1 teaspoon paprika

1/2 teaspoon cumin

1/2 teaspoon dried oregano

Salt and pepper, to taste

1 cup (240ml) heavy cream

1/2 cup (120g) cream cheese, softened

1/2 cup (60g) shredded cheddar cheese

1 tablespoon fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Tortillas, for serving

Instructions
 

Prep the Chicken: In a large skillet, heat olive oil over medium-high heat. Add the sliced chicken breasts and season with salt, pepper, chili powder, paprika, cumin, and oregano. Cook for about 5-7 minutes or until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.

    Sauté the Vegetables: In the same skillet, add the sliced onion and bell peppers. Sauté for 3-4 minutes until the vegetables begin to soften. Add the minced garlic and sauté for another minute, until fragrant.

      Make it Creamy: Reduce the heat to medium-low. Return the cooked chicken to the skillet. Stir in the heavy cream and cream cheese, mixing thoroughly until the cream cheese is melted and everything is well combined. Bring the mixture to a gentle simmer.
