Ingredients

1 cup wild rice blend

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

1 teaspoon dried thyme

1 teaspoon dried parsley

1/2 teaspoon dried rosemary

1/2 teaspoon black pepper

4 cups low-sodium chicken broth

2 cups cooked chicken, shredded (rotisserie chicken works well)

1 cup heavy cream

1/4 cup all-purpose flour

Salt to taste

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Wild Rice: In a medium saucepan, cook the wild rice according to the package instructions. Once cooked, set aside.

Sauté Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5-7 minutes, or until the vegetables are tender and the onion is translucent. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

Add Seasonings: Sprinkle in the dried thyme, parsley, rosemary, and black pepper. Stir the mixture to coat the vegetables in the herbs.

Pour in Broth: Gradually add the chicken broth, stirring well to combine. Bring the soup to a gentle simmer.

Incorporate Chicken: Add the shredded chicken into the pot, stirring to break up clumps. Allow the soup to simmer for about 10 minutes.

Make it Creamy: In a separate bowl, whisk together the heavy cream and flour until smooth. Slowly pour the mixture into the soup, stirring constantly to prevent lumps from forming.

Add Wild Rice: Stir in the cooked wild rice and let the soup simmer for another 10-15 minutes, allowing it to thicken slightly. Taste and season with salt as needed.

Serve: Ladle the soup into bowls and garnish with freshly chopped parsley. Serve warm with crusty bread for a delightful meal!
