Creamy Chicken and Rice Casserole

2 cups cooked chicken, shredded or diced

1 cup long-grain white rice, uncooked

2 cups chicken broth

1 cup heavy cream

1 cup frozen mixed vegetables (peas, carrots, corn)

1 small onion, finely chopped

2 cloves garlic, minced

1 tsp dried thyme

1 tsp dried parsley

1/2 tsp black pepper

1 cup shredded cheddar cheese

1/2 cup grated Parmesan cheese

2 tbsp olive oil

Salt to taste

Chopped fresh parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent. Add the minced garlic and cook for an additional 1 minute until fragrant.

      Combine Ingredients: In the skillet, combine the cooked chicken, uncooked rice, chicken broth, heavy cream, frozen mixed vegetables, thyme, parsley, black pepper, and salt to taste. Stir until all ingredients are evenly combined.

        Transfer to Baking Dish: Pour the mixture into a greased 9x13 inch baking dish. Spread it evenly and make sure the rice is submerged in the liquid.

          Add Cheese: Sprinkle the shredded cheddar cheese and grated Parmesan cheese on top of the casserole.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 15-20 minutes until the cheese is bubbly and golden brown, and the rice is fully cooked.

              Garnish and Serve: Remove from the oven and let it cool for about 5 minutes. Garnish with fresh parsley if desired. Serve hot and enjoy your creamy chicken and rice casserole!
