2 cups cooked chicken, shredded (about 2 large breasts)

3 cups fresh broccoli florets

1 cup cooked rice (white or brown)

1 cup shredded sharp cheddar cheese

1 cup sour cream

1 can (10.5 oz) cream of chicken soup

1/2 cup milk

1 tsp garlic powder

1 tsp onion powder

1/2 tsp salt

1/4 tsp black pepper

1 cup panko breadcrumbs

2 tbsp olive oil

1/4 cup grated Parmesan cheese (for topping, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Blanch the Broccoli: In a pot of boiling water, blanch the broccoli florets for 2-3 minutes until bright green and slightly tender. Drain and set aside.

      Prepare the Sauce: In a large mixing bowl, combine the sour cream, cream of chicken soup, milk, garlic powder, onion powder, salt, and black pepper. Mix until well blended.

        Combine Ingredients: To the mixed sauce, add the shredded chicken, cooked rice, and blanched broccoli. Stir gently until thoroughly combined. Fold in half of the cheddar cheese.

          Transfer to Baking Dish: Transfer the mixture to a greased 9x13 inch baking dish, spreading it evenly.

            Prepare the Topping: In a small bowl, mix the panko breadcrumbs, olive oil, and remaining cheddar cheese until the breadcrumbs are evenly coated.

              Assemble Bake: Sprinkle the breadcrumb mixture evenly over the top of the chicken and broccoli mixture. If desired, sprinkle Parmesan cheese on top for extra flavor.

                Bake: Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and bubbly.

                  Serve and Enjoy: Remove from the oven and let cool for a few minutes before serving. Garnish with fresh parsley if desired.
