Ingredients

1 cup Orzo pasta

2 cups vegetable broth

1 tablespoon olive oil

2 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup fresh spinach, roughly chopped

1 cup fresh mozzarella balls (bocconcini), halved

1/2 cup heavy cream

1/4 cup grated Parmesan cheese

1 teaspoon dried basil

1 teaspoon salt

1/2 teaspoon freshly cracked black pepper

Fresh basil leaves for garnish

Balsamic glaze for drizzling (optional)

Instructions

Cook the Orzo: In a medium saucepan, bring the vegetable broth to a boil. Add the orzo pasta and cook according to the package instructions until al dente, usually about 8-10 minutes. Once cooked, drain any excess liquid and set aside.

Sauté Aromatics: In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.

Add Cherry Tomatoes: Incorporate the halved cherry tomatoes into the skillet and cook for 3-4 minutes, stirring occasionally, until they begin to soften and release their juices.

Mix in Spinach: Stir in the chopped spinach and let it wilt, typically 1-2 minutes.

Creamy Base: Lower the heat and pour in the heavy cream while stirring continuously. Add the grated Parmesan cheese, dried basil, salt, and black pepper. Stir until the cheese melts and the mixture becomes creamy.

Combine Orzo: Add the cooked orzo to the skillet, tossing it gently to coat it fully in the creamy mixture. Fold in the halved mozzarella balls and cook for an additional 2-3 minutes until the cheese starts to soften.

Serve: Remove from the heat and transfer to serving dishes. Garnish with fresh basil leaves and drizzle with balsamic glaze if desired.

Enjoy: Serve warm and relish the delicious blend of creamy, cheesy, and fresh flavors!
