12 oz cheese tortellini (fresh or frozen)

1 cup Andouille sausage, sliced

1 medium onion, diced

1 red bell pepper, diced

2 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 cup shredded cheddar cheese

1 tbsp Cajun seasoning (adjust to taste)

2 tbsp olive oil

Salt and pepper, to taste

2 green onions, chopped (for garnish)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Tortellini: In a large pot of boiling salted water, cook the tortellini according to package instructions until al dente. Drain and set aside.

    Sauté the Sausage: In a large skillet, heat the olive oil over medium heat. Add the sliced Andouille sausage and sauté for about 5-7 minutes, or until they are browned and slightly crispy. Remove the sausage from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add the diced onion and red bell pepper. Sauté for about 4-5 minutes until the vegetables are tender. Add the minced garlic and cook for an additional minute until fragrant.

        Prepare the Cream Sauce: Pour in the chicken broth and heavy cream into the skillet with the sautéed vegetables. Stir to combine and bring to a simmer. Add the Cajun seasoning, salt, and pepper. Let the sauce simmer for about 5 minutes until it slightly thickens.
