12 oz fettuccine pasta

1 pound boneless, skinless chicken breasts

2 tablespoons Cajun seasoning

2 tablespoons olive oil

4 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

Salt and black pepper to taste

2 tablespoons chopped fresh parsley (for garnish)

1/2 cup sun-dried tomatoes, chopped (optional)

1 cup spinach (optional)

Instructions
 

Cook the Pasta:

    - In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Drain and set aside, reserving a bit of the pasta water.

      Prepare the Chicken:

        - While the pasta is cooking, season both sides of each chicken breast generously with Cajun seasoning, salt, and black pepper.

          Cook the Chicken:

            - In a large skillet over medium heat, heat the olive oil. Add the seasoned chicken breasts and cook for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is golden brown. Remove from the skillet, let rest for a few minutes, then slice into strips.

              Make the Alfredo Sauce:

                - In the same skillet used for the chicken, add minced garlic and sauté for about 1 minute until fragrant.

                  - Pour in the heavy cream and bring to a gentle simmer, stirring continuously.

                    - Gradually whisk in the grated Parmesan cheese until melted and the sauce is creamy. If your sauce is too thick, add a little reserved pasta water to reach desired consistency.

                      Combine Pasta and Chicken:

                        - Add the drained fettuccine to the sauce, tossing to coat the pasta evenly.

                          - Stir in the sliced chicken, and if desired, add in sun-dried tomatoes and spinach, cooking until the spinach wilts.

                            Serve:

                              - Season with additional Cajun seasoning, salt, and pepper as needed.
