2 cups fresh broccoli florets

2 medium potatoes, peeled and diced

1 medium onion, chopped

2 cloves garlic, minced

4 cups vegetable broth

1 cup heavy cream (or coconut milk for a dairy-free option)

2 tablespoons olive oil

1 teaspoon dried thyme

Salt and pepper to taste

½ cup shredded cheese (optional, for garnish)

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until softened. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

    Add Vegetables: Add the diced potatoes and broccoli florets to the pot. Stir to combine with the onions and garlic.

      Simmer: Pour in the vegetable broth, ensuring the vegetables are fully submerged. Bring the mixture to a boil, then reduce the heat to a simmer. Add the dried thyme, salt, and pepper. Cover and cook for about 15-20 minutes, or until the potatoes and broccoli are tender.

        Blend: Once the vegetables are cooked, use an immersion blender to puree the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup in batches to a countertop blender, blending until smooth, then return it to the pot.

          Add Cream: Stir in the heavy cream (or coconut milk) and heat over low for an additional 5 minutes. Taste and adjust seasoning with more salt and pepper if needed.

            Serve & Garnish: Ladle the creamy broccoli potato soup into bowls and top with shredded cheese and fresh parsley if desired. Serve warm with crusty bread or crackers on the side.
