4 cups fresh broccoli florets

1 medium onion, diced

2 cloves garlic, minced

3 tablespoons unsalted butter

3 tablespoons all-purpose flour

4 cups vegetable broth

2 cups whole milk

1 teaspoon Dijon mustard

1 teaspoon onion powder

1 teaspoon garlic powder

½ teaspoon salt (more to taste)

½ teaspoon black pepper (more to taste)

2 cups sharp cheddar cheese, grated

½ cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Prep the Broccoli: Begin by rinsing the broccoli florets and cutting them into small, bite-sized pieces. Set aside.

    Sauté Vegetables: In a large pot, melt the butter over medium heat. Add the diced onion and cook until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

      Create the Roux: Sprinkle the flour over the sautéed onions and garlic, stirring constantly for about 2 minutes to form a roux. It should turn slightly golden but not brown.

        Add Liquids: Gradually whisk in the vegetable broth, ensuring no lumps form. Once combined, slowly pour in the whole milk while continuing to whisk.

          Season the Soup: Stir in the Dijon mustard, onion powder, garlic powder, salt, and pepper. Allow to simmer for about 10 minutes, letting the soup thicken slightly.
