Ingredients

1 cup orzo pasta

2 cups broccoli florets

3 cups vegetable or chicken broth

1 cup shredded sharp cheddar cheese

1 cup heavy cream

2 tablespoons unsalted butter

1 tablespoon olive oil

2 cloves garlic, minced

½ teaspoon onion powder

½ teaspoon garlic powder

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Lemon zest (optional, for garnish)

Instructions

Cook the Orzo: In a large saucepan, bring the vegetable or chicken broth to a gentle boil. Add the orzo and cook according to package instructions until al dente, about 8-10 minutes.

Blanch the Broccoli: While the orzo is cooking, fill a small pot with water and bring to a boil. Add the broccoli florets and blanch for 2 minutes until bright green and tender-crisp. Drain and immediately transfer to an ice bath to stop the cooking process. Once cooled, drain again and set aside.

Make the Creamy Sauce: In a separate large skillet, heat the olive oil and unsalted butter over medium heat. Add the minced garlic and sauté for about a minute until fragrant. Make sure not to burn the garlic.

Combine Ingredients: Lower the heat, add the heavy cream to the skillet, and stir until well combined. Add the onion powder, garlic powder, salt, and pepper. Allow the mixture to simmer for 2-3 minutes to thicken slightly.

Add Broccoli and Cheese: Stir in the cooked orzo, blanched broccoli, and shredded cheddar cheese. Mix thoroughly until the cheese melts and coats the orzo evenly. If the mixture is too thick, you can slowly add more broth or cream until desired consistency is reached.

Serve Your Dish: Remove from heat and adjust seasoning if necessary. Spoon the creamy broccoli cheddar orzo into bowls and garnish with fresh parsley and lemon zest, if desired.

Enjoy: Serve immediately while hot, and enjoy this creamy, cheesy comfort dish!
