Creamy Broccoli and White Cheddar Soup

1 lb (450g) fresh broccoli, chopped into florets

1 medium onion, diced

2 cloves garlic, minced

4 cups (960ml) vegetable broth (or chicken broth for richer flavor)

2 cups (480ml) whole milk

1 cup (120g) sharp white cheddar cheese, grated

1 cup (120g) cream cheese, softened

2 tablespoons unsalted butter

1 teaspoon salt (adjust to taste)

½ teaspoon black pepper

¼ teaspoon nutmeg (optional)

¼ cup (60ml) heavy cream (for garnish)

Fresh chives or parsley, chopped (for garnish)

Instructions
 

Sauté the Base: In a large pot, melt the butter over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Then add the minced garlic and sauté for another minute until fragrant.

    Cook the Broccoli: Add the chopped broccoli to the pot. Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat and let it simmer for about 10-12 minutes, or until the broccoli is tender.

      Blend the Soup: Using an immersion blender, carefully blend the soup until smooth. If you don’t have an immersion blender, you can transfer the soup in batches to a blender. Return the blended soup to the pot.

        Add Dairy: Stir in the whole milk, cream cheese, and half of the grated white cheddar cheese. Cook over low heat, stirring frequently, until the cream cheese has melted and the soup is creamy. Adjust the seasoning with salt, pepper, and nutmeg.

          Final Touch: Gradually add the remaining white cheddar cheese, stirring continuously until fully melted and incorporated.

            Serve: Ladle the soup into bowls. Drizzle with heavy cream and garnish with chopped chives or parsley. Top with extra cheddar, if desired. Enjoy your delicious creamy soup!
