Creamy Bacon Pork Chops

4 bone-in pork chops (1-inch thick)

4 slices of thick-cut bacon, chopped

1 medium onion, finely diced

3 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 teaspoon Dijon mustard

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper, to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Pork Chops:

    Season the pork chops generously with salt, pepper, smoked paprika, and dried thyme on both sides.

      Cook the Bacon:

        In a large skillet over medium heat, add the chopped bacon. Cook until crispy, about 5-7 minutes. Remove the bacon with a slotted spoon and let it drain on a paper towel. Leave the bacon fat in the skillet.

          Sear the Pork Chops:

            Increase the heat to medium-high. In the same skillet, add olive oil if necessary. Add the seasoned pork chops and sear for about 5 minutes on each side, until they are golden brown and cooked through (internal temperature should reach 145°F). Transfer the chops to a plate and cover loosely with foil.

              Cook the Aromatics:

                In the same skillet, add the diced onion and sauté for about 3-4 minutes until translucent. Add the minced garlic and cook for another minute until fragrant.
