4 large eggs

1 ripe avocado, peeled and pitted

2 tablespoons Greek yogurt (or sour cream)

1 tablespoon Dijon mustard

1 tablespoon lemon juice

2 tablespoons fresh chives, chopped (or green onions)

1/4 teaspoon garlic powder

Salt and black pepper, to taste

A pinch of paprika (optional, for garnish)

Lettuce leaves, for serving (optional)

Instructions
 

Hard-boil the Eggs: Place the eggs in a saucepan and cover them with water. Bring to a boil over medium-high heat. Once boiling, reduce the heat to low and cover the pan. Let the eggs cook for 10-12 minutes. Once done, transfer them to an ice bath to cool for about 5 minutes, then peel and chop them into bite-sized pieces.

    Prepare the Avocado Mixture: In a mixing bowl, mash the ripe avocado using a fork until creamy but still slightly chunky. Add the Greek yogurt, Dijon mustard, lemon juice, garlic powder, and season with salt and black pepper. Mix well until all ingredients are combined.
