12 oz jumbo pasta shells

2 ripe avocados

1 cup fresh cilantro leaves, packed

2 cloves garlic

1/4 cup fresh lime juice

1/3 cup extra virgin olive oil

1/2 tsp sea salt (adjust to taste)

1/4 tsp black pepper

1/2 cup cherry tomatoes, halved

1/4 cup crumbled feta cheese (optional)

Fresh cilantro for garnish

Lime wedges for serving

Cook the Pasta: Bring a large pot of salted water to a boil. Add pasta shells and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.
