Ingredients

2 cups all-purpose flour

1/4 cup granulated sugar

1 tbsp baking powder

1/2 tsp salt

1/4 cup unsalted butter, cold and cubed

1/2 cup dried cranberries

1/2 cup white chocolate chips

3/4 cup heavy cream (plus extra for brushing)

1 tsp vanilla extract

Zest of 1 orange (optional)

Coarse sugar, for sprinkling on top

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Combine Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt.

Cut in the Butter: Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingertips, blend until the mixture resembles coarse crumbs.

Add Mix-Ins: Stir in the dried cranberries and white chocolate chips. If using, fold in the orange zest for added flavor.

Mix Wet Ingredients: In a separate bowl, combine the heavy cream and vanilla extract. Slowly pour this into the dry mixture and gently fold until just combined. Be careful not to overwork the dough.

Shape the Dough: Turn the dough out onto a lightly floured surface. Knead gently a few times until it forms a cohesive ball. Pat the dough into a circle about 1-inch thick.

Cut the Scones: Using a sharp knife or a pizza cutter, cut the dough into 8 wedges. Place them on the prepared baking sheet, spacing them slightly apart.

Brush and Sprinkle: Brush the tops of the scones with a little heavy cream and sprinkle coarse sugar over them for added crunch.

Bake the Scones: Bake in the preheated oven for 15-20 minutes, or until the scones are golden brown and a toothpick inserted into the center comes out clean.

Cool and Serve: Allow the scones to cool on the baking sheet for about 5 minutes before transferring them to a wire rack. Enjoy them warm or at room temperature, perhaps with a smear of butter or clotted cream!
