2 large sweet potatoes, peeled and diced into 1-inch cubes

1 lb ground turkey

1 medium onion, chopped

2 cloves garlic, minced

1 cup green beans, trimmed and halved (fresh or frozen)

1 cup corn kernels (fresh, frozen, or canned)

1 can (14.5 oz) diced tomatoes, drained

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon dried oregano

Salt and pepper to taste

½ cup shredded cheddar cheese (optional)

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Sweet Potatoes: In a large bowl, toss the diced sweet potatoes with a drizzle of olive oil, salt, and pepper. Spread them in an even layer in a baking dish. Roast in the preheated oven for about 20 minutes or until they start to soften.

      Cook the Turkey Mixture: While the sweet potatoes are roasting, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent (about 3-4 minutes). Add the ground turkey, cooking until it's browned and fully cooked, breaking it apart with a spatula.

        Combine Ingredients: Once the turkey is cooked, stir in the green beans, corn, diced tomatoes, cumin, smoked paprika, oregano, and season with salt and pepper. Allow this mixture to simmer together for about 5 minutes for the flavors to meld.

          Combine and Bake: After 20 minutes, remove the sweet potatoes from the oven and stir in the turkey mixture until fully combined. If using, sprinkle the shredded cheddar cheese evenly over the top.

            Final Bake: Return the dish to the oven and bake for an additional 15-20 minutes, until the sweet potatoes are tender and the top is golden and bubbly.

              Serve: Remove from the oven and let the bake sit for a few minutes. Garnish with freshly chopped parsley before serving.
