1 lb ground turkey

1 can (15 oz) pure pumpkin puree (not pumpkin pie filling)

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) diced tomatoes (fire-roasted preferred)

1 can (15 oz) corn, drained

1 medium onion, diced

2 cloves garlic, minced

2 cups chicken broth

2 tbsp chili powder

1 tbsp ground cumin

1 tsp smoked paprika

1 tsp dried oregano

1/2 tsp cayenne pepper (adjust for spiciness)

Salt and pepper to taste

Optional toppings: sour cream, shredded cheese, fresh cilantro, avocado, diced jalapeños

Instructions
 

Brown the Turkey: In a skillet over medium heat, add a splash of olive oil and cook the ground turkey until it's browned and cooked through, about 5-7 minutes. Break it up with a spoon as it cooks to ensure it’s crumbly. Season with salt and pepper while it cooks.

    Prepare the Crockpot: While the turkey is cooking, place the pure pumpkin puree, black beans, diced tomatoes, corn, onion, minced garlic, and chicken broth into the crockpot.

      Add the Spices: Stir in the chili powder, cumin, smoked paprika, oregano, and cayenne. Mix well to combine everything evenly.

        Combine Turkey and Mixture: Once the turkey is cooked, add it to the crockpot and stir until everything is well combined.

          Cook: Cover the crockpot and set it to low for 6-8 hours or high for 3-4 hours. The longer it cooks, the better the flavors meld together.
