1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) black-eyed peas, rinsed and drained

1 cup sweet corn (fresh, frozen, or canned)

1 cup cherry tomatoes, halved

1 red bell pepper, diced

1 green bell pepper, diced

1/2 red onion, finely chopped

1 avocado, diced

1/2 cup fresh cilantro, chopped

1 jalapeño, seeded and finely chopped (optional, for spice)

Juice of 2 limes

3 tablespoons olive oil

1 teaspoon ground cumin

Salt and pepper to taste

Prepare the Vegetables: In a large mixing bowl, combine the rinsed black beans, black-eyed peas, sweet corn, cherry tomatoes, red and green bell peppers, red onion, jalapeño (if using), and cilantro. Stir gently to combine all the ingredients.

    Make the Dressing: In a separate small bowl, whisk together the lime juice, olive oil, cumin, salt, and pepper. Adjust seasoning to taste.

      Combine: Pour the dressing over the vegetable mixture and stir well to coat all the ingredients evenly.

        Add the Avocado: Gently fold in the diced avocado to avoid mashing it.

          Chill: Cover the Cowboy Caviar with plastic wrap or transfer it to an airtight container. Let it chill in the refrigerator for at least 30 minutes to allow the flavors to meld together.
