Ingredients

2 cups all-purpose flour

1 cup granulated sugar

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup unsalted butter, melted

2 large eggs

1 teaspoon vanilla extract

1/2 cup buttermilk

2 cups peeled and diced apples (such as Granny Smith or Honeycrisp)

1/2 cup chopped pecans or walnuts (optional)

1/4 cup brown sugar

1 teaspoon ground cinnamon (for topping)

For the Glaze:

1 cup powdered sugar

2 tablespoons milk

1/2 teaspoon vanilla extract

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.

Prepare the Dry Ingredients: In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, salt, and cinnamon.

Mix the Wet Ingredients: In another bowl, whisk together the melted butter, eggs, vanilla extract, and buttermilk until smooth.

Combine Mixtures: Pour the wet ingredients into the dry ingredient mixture. Stir until just combined, being careful not to overmix.

Add Apples and Nuts: Gently fold in the diced apples and nuts (if using) until evenly distributed.

Layer with Cinnamon Sugar: In a small bowl, mix the brown sugar and cinnamon together. Pour half of the batter into the prepared loaf pan, then sprinkle half of the brown sugar cinnamon mixture over it. Add the remaining batter on top and finish with the remaining cinnamon sugar.

Bake: Bake in the preheated oven for about 50-60 minutes, or until a toothpick inserted into the center comes out clean. If the top is browning too quickly, cover it loosely with aluminum foil during the last 15 minutes of baking.

Cool: Once baked, remove the loaf from the oven and allow it to cool in the pan for 10 minutes. Then, transfer to a wire rack to cool completely.

Prepare the Glaze: In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Drizzle the glaze over the cooled bread.

Serve: Slice and serve your Country Apple Fritter Bread warm or at room temperature. Enjoy it as a delicious breakfast treat or a delightful dessert!
