Cold Spinach Feta Pasta

8 oz (227 g) pasta (preferably fusilli or rotini)

2 cups fresh spinach, chopped

1 cup cherry tomatoes, halved

1 small cucumber, diced

1/2 cup red bell pepper, diced

1/2 cup feta cheese, crumbled

1/4 cup black olives, sliced (optional)

3 tablespoons olive oil

2 tablespoons lemon juice

1 garlic clove, minced

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain, rinse under cold water, and set aside to cool.

    Prepare the Vegetables: While the pasta cools, wash and chop the spinach, cucumber, red bell pepper, and cherry tomatoes, and slice the olives if using.

      Make the Dressing: In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and pepper until well combined.

        Combine Ingredients: In a large mixing bowl, combine the cooled pasta, chopped spinach, cucumber, cherry tomatoes, diced red bell pepper, olives, and crumbled feta cheese.

          Dress the Salad: Pour the dressing over the pasta mixture and toss gently until everything is well coated.

            Chill: Cover the bowl with plastic wrap or a lid and refrigerate for at least 30 minutes to allow the flavors to meld.

              Serve: Before serving, give the pasta a gentle toss to redistribute the dressing. Garnish with chopped fresh parsley.
