1 cup pearl couscous

2 cups vegetable broth (or water)

1 cup fresh basil leaves, packed

1/4 cup pine nuts (toasted)

1/4 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

2 cloves garlic

1/3 cup olive oil

Salt and pepper to taste

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup feta cheese, crumbled (optional)

1/4 cup Kalamata olives, pitted and halved

Juice of 1 lemon

Instructions
 

Cook the Couscous: In a medium saucepan, bring the vegetable broth (or water) to a boil. Add the pearl couscous, reduce the heat to low, cover, and simmer for about 10-12 minutes, or until the couscous is tender. Once done, remove from the heat and let it cool.

    Prepare the Pesto: While the couscous is cooking, combine the basil leaves, toasted pine nuts, Parmesan cheese, garlic, and a pinch of salt and pepper in a food processor. Pulse until finely chopped.

      Emulsify the Pesto: With the food processor running, gradually add the olive oil until the mixture is smooth and creamy. Scrape down the sides as needed. Taste and adjust seasoning if necessary.

        Combine Couscous and Pesto: Once the couscous has cooled, transfer it to a large mixing bowl. Add the prepared pesto, and gently stir until the couscous is well-coated.
