Ingredients

1 lb boneless, skinless chicken tenders

1 cup shredded unsweetened coconut

1 cup panko breadcrumbs

1/2 cup all-purpose flour

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

Cooking spray (or a light coating of oil)

Instructions

Prep the Chicken: Start by patting the chicken tenders dry with kitchen paper towels. This will help the coating stick better during cooking.

Set Up the Breading Station: In three separate bowls, set out the all-purpose flour, beaten eggs, and mix together the shredded coconut, panko breadcrumbs, garlic powder, onion powder, paprika, salt, and pepper in the third bowl. Ensure the mixture is evenly combined.

Bread the Chicken Tenders: Take each chicken tender and first coat it in the flour, shaking off any excess. Then dip it into the beaten eggs, allowing any extra to drip off. Finally, press the chicken into the coconut and panko mixture, ensuring it's evenly coated. Place the breaded tenders on a plate.

Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes. This step helps to achieve maximum crispiness.

Air Fry the Chicken Tenders: Spray the air fryer basket lightly with cooking spray to prevent sticking. Place the chicken tenders in a single layer in the basket, making sure not to overcrowd them (you may have to do this in batches). Lightly spray the tops with more cooking spray for extra crunch.

Cook the Chicken: Air fry the chicken tenders for 8-10 minutes, flipping them halfway through the cooking time until golden brown and crispy, and the internal temperature reaches 165°F (74°C).

Serve: Once cooked, carefully remove the chicken tenders from the air fryer. Serve them hot with your choice of dipping sauce, like sweet chili sauce or a tangy mango salsa, for an added tropical flair.
