4 large eggs

1/4 cup shredded cheese (cheddar, feta, or your choice)

1/4 cup mixed seasonal herbs (such as chives, parsley, dill, and basil), finely chopped

Salt & pepper to taste

1 tablespoon olive oil or melted butter

Optional garnish: microgreens or additional herbs

Preheat the Oven: Preheat your oven to 450°F (230°C). Line a baking sheet with parchment paper for easy cleanup.

    Separate the Eggs: Carefully separate the egg whites from the yolks. Place the egg whites in a large, clean bowl and reserve the yolks in their shells or in a separate bowl.

      Whip the Egg Whites: Using an electric mixer, whip the egg whites on medium-high speed until they form stiff peaks and become fluffy and glossy, which should take about 3-4 minutes.

        Fold in Ingredients: Gently fold in the shredded cheese, chopped herbs, and a pinch of salt and pepper into the whipped egg whites, ensuring you maintain their airy texture.

          Shape the Clouds: Utilizing a large spoon or spatula, scoop the mixture onto the prepared baking sheet, forming two mounds. Create a small indentation in the center of each mound for the yolk.

            Add the Yolks: Carefully place one yolk into the indentation of each cloud, being cautious not to break the yolk. Drizzle with olive oil or melted butter.

              Bake: Bake the cloud eggs in the preheated oven for about 3-5 minutes, or until the yolks are cooked to your desired doneness and the clouds are golden brown.

                Serve: Remove from the oven, and let cool for a minute. Garnish with microgreens or additional fresh herbs for a beautiful presentation, and serve immediately.
