8 ounces elbow macaroni

4 tablespoons unsalted butter

1/4 cup all-purpose flour

4 cups whole milk

2 teaspoons Dijon mustard

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon cayenne pepper (optional, for a kick)

3 cups shredded sharp cheddar cheese

1 cup shredded Gruyère cheese

Salt and black pepper to taste

1 cup panko breadcrumbs

2 tablespoons olive oil

1/4 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

    Make the Cheese Sauce: In a large saucepan over medium heat, melt the butter. Once melted, whisk in the flour to create a roux, cooking for about 1-2 minutes until it’s lightly golden. Gradually add the whole milk while continuously whisking to prevent lumps. Continue cooking, stirring frequently, for about 5-7 minutes until the mixture thickens.

      Add Seasonings: Stir in the Dijon mustard, garlic powder, onion powder, cayenne pepper (if using), salt, and black pepper. Remove the saucepan from heat, and gradually stir in the shredded cheddar and Gruyère cheeses until fully melted and creamy.

        Combine with Pasta: Add the drained macaroni to the cheese sauce, stirring gently to combine until all pasta is coated.

          Prepare the Crispy Topping: In a small bowl, combine the panko breadcrumbs, olive oil, grated Parmesan, and a pinch of salt. Mix until the breadcrumbs are evenly coated.

            Assemble the Dish: Preheat the oven to 350°F (175°C). Transfer the macaroni and cheese mixture to a greased 9x13 inch baking dish. Evenly sprinkle the panko topping over the mac and cheese.

              Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes or until the top is golden brown and crispy.
