1 pound baby carrots (or regular carrots, peeled and cut into sticks)

3 tablespoons honey

2 tablespoons fresh orange juice

1 tablespoon lemon juice

1 tablespoon unsalted butter

1 teaspoon grated fresh ginger

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Salt and pepper to taste

Zest of 1 orange

Zest of 1 lemon

Prepare the Carrots: If using regular carrots, peel and cut them into uniform sticks about 2 inches long. If you’re using baby carrots, rinse them well and set aside.

    Make the Glaze: In a small bowl, combine the honey, orange juice, lemon juice, and fresh ginger. Whisk until well blended and the honey is dissolved.

      Cook the Carrots: In a large skillet, melt the butter over medium heat. Add the prepared carrots and sauté for about 5 minutes, stirring occasionally, until they begin to soften and become slightly golden.

        Add the Glaze: Pour the citrus and honey mixture over the carrots. Sprinkle in the thyme, salt, and pepper. Toss everything together to coat the carrots evenly.

          Simmer: Reduce the heat to low and cover the skillet. Allow the carrots to simmer in the glaze for another 10-15 minutes, or until they are tender and the glaze has thickened slightly. Stir occasionally to prevent sticking.

            Finish with Zest: Once cooked, remove the skillet from the heat. Add the orange and lemon zest, tossing to combine. Adjust the seasoning with additional salt and pepper if needed.
